Topics include nutrition risk screening, interviewing/counseling methods, diet evaluation, basic diet calculations, documentation, medical terminology, food and drug interactions, quality assurance and physical fitness. Nutrition assessment parameters, nutrition care planning and evaluation, and menu editing methods. Prerequisites: FDNS 1345 and HECO 1322 (3:3-0)

Direct supervision is provided by a clinical professional. Specific detailed learning objectives are developed for each course by the faculty. Clinical experiences are unpaid external learning experiences. Prerequisites: FDNS 1103 and FDNS 2233 (3:0-10)
