Provides students with the knowledge regarding the scientific basis of sports nutrition and its application of sports nutrition. Learning topics include sports nutrition concepts, digestion, absorption, and metabolism of nutrients, energy expenditure and energy metabolism during various types of exercise, diet recommendations during training/competition based on sport, meal recommendations, use of supplements and ergogenic aids, and special recommendations for groups of athletes.

Examines the managerial functions in nutrition and food service. Topics include the discussion of managerial duties, leadership, personnel management, financial aspects of nutrition and food services, and marketing techniques.

Introduces students in Nursing, Pre-medical, Pre-PA, and other allied health care fields to more advanced topics in human nutrition including nutrition through the life cycle, selected cultural diet variation, basic food safety concepts, diet and physical activity recommendations, medical nutrition therapy for selected diseases, and enteral and parenteral nutrition support. Digestion and absorption, energy balance, macronutrients, and micronutrients are also reviewed.

Explores the biochemical basis of human nutrient metabolism of carbohydrates, proteins, lipids, vitamins, minerals, and alcohol at the cellular and organ levels. Topics include the chemical structures, functions, and metabolic pathways of macronutrients and micronutrients, anabolic and catabolic reactions, enzymatic and hormonal regulations, gene-nutrient and protein interactions, and metabolic conditions/diseases. Digestion, absorption, transport, storage, and excretion of nutrients are examined.

Topics include a critical evaluation of original research and evidenced-based information, interpretation and summarization of results, and a careful analysis of the cited literature. Contemporary issues in nutrition and dietetics will be explored.
