This course is an introduction to nutrition and diet and provides an understanding of the process of life through an understanding of how nutrition, health, and life sciences are interrelated. Basic nutrition principles include the function of nutrients, the digestive system, food composition and diet analysis, and nutritional roots of disease. Further, this course will discuss how nutrition is related to overall fitness and changes over the life cycle. Through concept development, inquiry, and critical thinking, emphasis is placed on an understanding of nutrition for optimal health and on the study of nutrition as a means for understanding the scientific process. 3 hours weekly; 3 credits
