Explores basic human nutrition and the food habits of individuals from various countries and ethnic backgrounds. Students assess their own culture compared to the cultures discussed in class and examine how to interact in a culturally sensitive manner.

Introduces students entering the nutrition field or another closely related healthcare profession to anthropometric, biochemical, clinical and dietary nutrition assessment methods. Practical application of these concepts in the nutritional care of clients in clinical, community, and research applications is required. The Nutrition Care Process and basic medical terminology are also covered.

Addresses community nutrition programs and services at all levels of development. Topics include the role of a community nutritionist; the process of community needs assessment, program planning, implementation, and evaluation; socioeconomic and cultural context of program and services; and the political and legislative processes in relation to nutrition.

Introduces students to the theoretical basis of effective nutrition counseling and health education techniques. The student will have the opportunity to practice assessing and documenting the nutrition status of individuals. This course provides hands-on experiences in counseling, educational program development, and oral and written communications.

Provides students with the knowledge regarding the scientific basis of sports nutrition and its application of sports nutrition. Learning topics include sports nutrition concepts, digestion, absorption, and metabolism of nutrients, energy expenditure and energy metabolism during various types of exercise, diet recommendations during training/competition based on sport, meal recommendations, use of supplements and ergogenic aids, and special recommendations for groups of athletes.

Examines the managerial functions in nutrition and food service. Topics include the discussion of managerial duties, leadership, personnel management, financial aspects of nutrition and food services, and marketing techniques.

Introduces students in Nursing, Pre-medical, Pre-PA, and other allied health care fields to more advanced topics in human nutrition including nutrition through the life cycle, selected cultural diet variation, basic food safety concepts, diet and physical activity recommendations, medical nutrition therapy for selected diseases, and enteral and parenteral nutrition support. Digestion and absorption, energy balance, macronutrients, and micronutrients are also reviewed.
