    In this MTSE we don't just study pilgrimage, we become pilgrims as we trek along the Camino de Santiago from the French Pyrenees to Finisterre - the end of the earth - on Spain's Atlantic coast. This is a journey of body, soul and mind for students who crave adventure and want an immersive experience. As we trek along what was once a primitive trade route, we will discuss the entrepreneurial drive that has supported and shaped the pilgrim experience. As we skirt mountains and move through verdant valleys, we discover how the environment has shaped the trail and how the pilgrim experience has shaped the world around it. In small villages and along the trail we immerse ourselves in language and culture as we communicate with residents, business owners, hospitaleros, and other pilgrims. For almost 4 weeks, we will live a simple life, carry what we need on our backs, sleep in familiar hotels and hostels called albergues, and experience the Spanish countryside and the incredible food and people of Spain. The physical demands of this pilgrimage, coupled with the camaraderie of students and faculty, create a transformative adventure that will define your college experience.

    Veganism was relatively unknown a few years ago. Not so today. Yet, many cannot comprehend why anyone would choose to eat like that or, even more perplexing, why they are so passionate about it? This class explores the vegan movement and the reasoning behind the revolution that is waged with fork and knife. The five pillars of veganism #NAME? justice, animal welfare, and taste - will be thoroughly examined. We will be sharing eight meals together. Omnivores welcome. Course fee is $95.00

    Since the Cuban revolution ended in 1959, the US embargo of Cuba began in 1960, and the US backed Bay of Pigs invasion failed in 1961, Cuba has held a unique place both in the Western Hemisphere and in the American psyche. For many Americans this has resulted in the formation of a myriad of perceptions and misconceptions about Cuba, which in many cases are based on very little information or fact. This May Term Study Experience will provide students with a firsthand opportunity to evaluate their own perceptions of Cuba and confront their misconceptions of this Caribbean island nation through the lenses of environmental science, environmental policy, politico-economics, music, dance, language, and culture. Students will also be immersed in the Spanish language during homestays and interview assignments, as well as famous music and dance of Cuba.

    This May Term Study Experience will take students to Western China (specifically Sichuan, Yunnan, and Tibet) to visit numerous world heritage sites, sacred landscapes, and places of cultural and ecological significance, such as Mount Qingcheng (one of the most important centers of Daoism in China), Mount Emei (one of the four sacred Buddhist mountains of China), Potala Palace (the residence of the Dalai Lama until the 14th Dalai Lama), Namtso (one of the three sacred lakes in Tibet that is venerated by the indigenous Tibetan Bon culture and Tibetan Buddhists , and Yubeng village (where one can trek to sacred waterfalls, lakes, and ancient glaciers). Excursion sites are grouped together with their connection to the three major academic focuses of the course: a) sacred relationship between people and place, b) environmental heritage and pollution control, and c) the impacts of climate change, development and tourism on the livelihood of local people. Through three weeks of travel, participants will have the opportunity to develop a deeper understanding of the richness and complexity of the human-environment relationship, global self-awareness, and other crucial personal qualities such as flexibility and responsibility.

    For many it is a playground. For others, it is the source of our water. For still others it represents a congested transportation corridor or the home of a business. For some, including the wildlife of the canyon, it is simply home. This interdisciplinary course will explore the history, ecology, and political/cultural factors at play in Little Cottonwood Canyon. The course will include short field trips, guest speakers, service projects, and in class discussions.

    This is course will introduce students to specific aspects of environmental consulting which concentrates on the intersection of electric utility regulation and avoidable environmental degradation. The generation of electricity is responsible for over 60% of the U.S.'s SO2 emissions, 75% of acid gases, 50 % of mercury emissions and 35% of CO2 emissions. Electricity generation is a state regulated industry where a state agency, the Public Service Commission, sets prices and service standards for the companies that produce this vital service. Environmental organizations have come to realize that their intervention into this regulatory process can yield dramatic environmental results. The course will introduce students to how the Utah regulatory process is organized, how rates are set, and how the standards of operation are determined. The course will explain about how electricity generation impacts the environment and how specific regulatory policies can help remedy these problems. It will also explain how environmental groups can get involved in this process as well as discuss various career paths and strategies for future employment opportunities. Specific topics will include: wind power development, Integrated Resource Planning, demand-side management, net metering and other solar programs, rate design, renewable portfolio standards and other topics. The instructor has over 25 years of experience as a utility regulator and environmental consultant. No prerequisites are required.

    Join us in a unique experience at Great Salt Lake and in the classroom as we explore the art, literature, and historical texts inspired by our inland sea. Field trips will engage students in developing an eco-critical lens. Students will be asked to use language and their visual capacity, not as a metaphor for an ecosystem, but as a means to engage as members of an ecosystem, wherein Great Salt Lake functions as the primary text. Students will create field-guides that explore the intersection between art and environment, as well as self-directed final projects.

    This outdoor leadership course is designed for students with an interest in organizing and leading outdoor trips. Topics covered include basic wilderness survival, navigation skills, route planning, hazard awareness, group dynamics, communication and leadership techniques, food rationing and outdoor cooking, emergency procedures, and Leave-No-Trace skills. Students will participate in both classroom and wilderness settings, including weekend trips to apply knowledge.
