This seminar is a capstone course for the Liberal Studies program.This seminar will confront some of the founding philosophical issues and principles that serve as sources of interdisciplinarity and a liberal education. This seminar will review the seven classical liberal arts (Trivium and Quadrivium). Examination of the relationship between a students major or Liberal Studies concentration and the classical liberal arts will be analyzed en route to developing a seminar paper. This exciting course explores what it takes to be successful in hospitality and tourism- the world's largest industry. The fundamentals of service managment in hotels & lodging, food beverage, travel & tourism, recreation & leisure and meetings & events are covered. Several local class trips and daytrips to NYC are incorporated. Pre-Requisite: None OR The online version of Intro to Service Management to be offered as an "On-line" course in which more than 80% of the instruction will be completed online. Pre-Requisite: None

Students engage in distinguishing foodservice purchasing, computer programs, and HACCP flow-thru. Storage and evaluation of fresh, frozen, dry and canned foodstuffs are discussed via sensitivity exercises and problem-solving activities.

Explains travel agency operation, drawing upon a wide range of disciplines to provide the fundamental knowledge and skills required to fulfill the demands placed upon those in management positions in the hospitality industry; includes basic ticketing, history of travel, airlines, steamships, cruises, rail and bus transportation, world travel areas, codes and industry travel terms.

Students will develop an awareness of the importance of teamwork, planning, organization, and supervision in cruise line operations.
