This course introduces students to the art of working with chocolate and sugar. Topics include tempering, cutting shapes, transfer sheets, display pieces, candies, and sugar doughs. Students will be exposed to the idea of sugar as an art with techniques in poured, pulled and spun sugar. Prerequisite: CUL 121, CUL 130 or concurrent enrollment, HSM 115, or Division Chair permission.

This course provides the advanced student with instruction and practice in the classic techniques and recipes upon which the culinary arts foundation is built. This course will also serve as a culinary arts competition training to prepare students to further their education by competing. Prerequisites: HSM 115, CUL 101, CUL 102, CUL 103, CUL 121.

This course provides the advanced culinary arts student instruction and practice in the actual back of the house operation of a working restaurant. Practice in cooking, menu design, managing, plating and service is also included. Prerequisites: CUL 101, CUL 102, CUL 103, CUL 121, HSM 115, HSM 125, or Division Chair permission.

This course provides advanced training in preparation of selected ethnic and foreign cuisines. Students will study the relationship and infl uence of foreign cuisine on today's more popular ingredients and dishes. Prerequisites: CUL 102, CUL 103.

This is an advanced level culinary arts course that will introduce the students to other professionals in the hospitality fi eld to grasp a better understanding of what to expect when they get out into the workplace, and also to understand some of the problems that they may face and how to overcome them. Prerequisites: CUL 102, CUL 103, HSM 270.

3.00 Credits
This course entails a supervised work experience in the major fi eld, which provides the opportunity to make practical application of the knowledge and skills attained. An individualized instructional management plan will determine goals to be accomplished. Seminars may also be required. Please see the Chair of the specifi c program area for application. Prerequisites: Completion of 30 credit hours and 2.0 GPA, or advisor's approval.

An introduction to the professionalism and responsibilities of a Dental Assistant during chairside procedures to include lectures followed by practice and evaluation of management of pain and anxiety and the foundation of clinical dentistry. Prerequisite: Admission to the Dental Assisting program.

This course introduces the infection and hazard control procedures necessary for the safe practice of dentistry. Emphasis is on microbiology, practical infection control, sterilization and monitoring, chemical disinfectants, aseptic technique, infectious diseases, and OSHA standards. Prerequisite: Admission to the Dental Assisting program.

This course is designed to introduce the Dental Assistant to specialty dental practice. The following specialties are included: endodontics, oral and maxillofacial surgery, orthodontics, pediatric dentistry, periodontics, prosthodontics, and dental public health. Prerequisite: Grade of "C" or higher in all of the previous Dental Assisting courses.

This course provides an introduction to the nomenclature used by the dental profession including vocabulary terms, communication skills, role playing and the psychology of dentistry. A community project is also included. Prerequisite: Grade of "C" or higher in all of the previous Dental Assisting courses.
