    Prerequisite: Minimum grade of C in READ 100 or satisfactory test score. This course will cover food borne diseases and illnesses transmitted by food and food handlers. Relationship of sanitary conditions in the preparation, storage, and service of food and the preservation of health. Laws and regulations of safety and the responsibility of the foodservice manager in upholding these health regulations. Provides a basis for understanding the various challenges and responsibilities involved in managing a food and beverage operation in a club setting. Students will learn to create, write, analyze for nutrition, and market menus for clubs. Students will be introduced to the basics of purchasing, receiving, issuing, costing, and financial management for club food & beverage operations. Students will earn to prepare basic food items, use common equipment, practice table service, and ollow rules of sanitation. [Semesters Offered: Fall]

Dining room operation stressing practical service experience and principles of supervision.     Prerequisite: Minimum grade of C in READ 100 or satisfactory test score. This course will give the student a practical insight into different kinds of meetings and conventions. The course will study the different types of organizations that stage such events, and the people who hold the key to site selections. The course will identify how to reach and sell to these important groups and key people. This course will give the student a basic understanding of the service aspect of planned events. Students will gain an understanding of function rooms and meeting setups, food and beverage service, audiovisual requirements, admission systems, exhibits and trade shows and finally convention billing and post-convention review.     Prerequisite: Minimum grade of C in READ 100 or satisfactory test score. This course will provide practical insight into the career of Special Event Planning. It will include the characteristics of events, the development of event objectives, design plans, promotion, sponsorship, protocol, and venue requirements. Pertinent laws and regulations, insurance and security issues, risk management, contingency planning, and post event evaluation will be covered. [Semesters Offered: Fall]

    Prerequisite: Minimum grade of C in HOSP 150, HOSP 155, HOSP 160, HOSP 165 and HOSP 170. This is a capstone course in which the student searches independently, with assistance from the Coordinator of Work-Based Learning, for a business or industry related to the program in which he/she is enrolled to complete 144 hours of a specified project or objective. The student will be placed, supervised, and evaluated under the direction of a college staff member to insure a meaningful internship experience. The student is asked to meet with the Coordinator of Work-Based Learning prior to registering for this course. [Semesters Offered: Variable]
