The course will cover dietary and clinical assessment, nutrition counseling, and communication skills for behavior change. Laboratory data for assessing nutritional status and food-drug interactions that affect the efficacy of the food and drugs will be examined. Medical record charting and documentation using the diet prescription for patient focused care will be included. There is an analysis of ethics in the provision of food and nutrition world wide and individually for the development of entry level dietitians.
