    Banner Title: Contemporary Cuisine I This course emphasizes all modern cuisine and introduces the management concepts necessary to the functioning of a commercial kitchen. Topics include international cuisine, cuisine trends, kitchen organization, kitchen management and supervision, competition entry, and nutrition. Laboratory demonstration and student experimentation parallel class work. Students must pay a $45 supply fee when registering for this course.     Banner Title: Community Resources I This is the first of two courses (each accompanied by a practicum) designed to provide people working in direct support roles with the knowledge and tools that will enable them to provide support services to people with disabilities within a context that is inclusive, community-based, and person centered. Topics include core values driving community support, distinct roles of direct support, the M.G.&A. systematic instruction procedures, and discovery as opposed to testing and evaluation. This course also introduces the five accomplishments of accessing the resources of the community, representing and assisting persons with disabilities in community contexts, understanding and developing professional and family relationships, and understanding and utilizing social capital to strengthen community participation.     Banner Title: Community Resources II This course provides people working in direct support roles with the knowledge and tools that will enable them to provide better support services to people with disabilities in a context that is inclusive, community-based, and person centered. Topics include positive behavior supports, systematic instruction in community and work places, responsibilities within direct support roles regarding rights of individuals receiving services and the legal implications for violating those rights, and abuse recognition and the reporting requirements when abuse is suspected. The course content also focuses on recognizing nutritional and emotional health and resources for physical supports, basic life and health supports and the dangers associated with common safety and sanitation issues, appropriate medical practice relating to an individual, appropriate work habits and dealing with stress, organizational structures of learning organizations, and the purpose and function of community services.     Banner Title: Direct Support Practicum I Students complete this course as a mandatory practicum for DCP 110 and involves people working in direct support roles with people with disabilities. The practicum is structured within the context that is inclusive, community-based, and person centered. Topics include training practice, demonstrating strategies for using discovery process techniques, identifying and qualifying individual accomplishments, assisting in individual planning processes, preparing resource maps for guiding action plans, providing appropriate representation for persons with disabilities, and identifying community human support systems. Corequisite: DCP 110 Offered on an as-needed basis for the Direct Support Professional technical certificate of credit

    Banner Title: Direct Support Practicum II This practicum accompanies DCP 111 and provides students with guided experiences in supporting persons with disabilities in community environments in a manner that is inclusive, community-based, and person centered. Topics include using positive behavior supports and teaching strategies in community settings, demonstrating basic knowledge of health and other personal wellness practices, and practicing and participating in developing organizational structures that facilitate the effectiveness of direct support staff. Prerequisites: DCP 110, DCP 113 Corequisite: DCP 111 Offered on an as-needed basis for the Direct Support Professional technical certificate of credit

    Banner Title: Drafting Fundamentals Students learn the concepts and operations necessary to utilize microcomputers for developing fundamental drafting techniques. Instructors emphasize the basic concepts, terminology, and techniques necessary for CAD applications. Topics include safety practices, geometric terms, drawing media, hardware and software use, basic entities, CAD commands and applications, line relations, and geometric construction. Beginning students choose between DDF 100, a CAD-based course, and DDF 101, a board-based course, depending on their individual needs. Prerequisite: Provisional admission Offered quarterly
