This course surveys operating decisions and practices in both manufacturing and service oriented firms. While no attempt is made to cover any particular area in depth, standard terms and concepts required to communicate effectively with operating personnel are introduced. Emphasis is placed on the systems approach to the efficient allocation of resources within the firm, as well as the chalanges of managing people, equipment, and materials to achieve organizational objectives.

MGMT 3320 Operations Management 3 class hours, 3 credits Traditional, total quality, just-in-time, best cost, capacity and constraints management philosophies applied to manufacturing and services. Operations management is the integration of these philosophies and takes a systems perspective to long and short-range planning, scheduling, executing, controlling and measuring operations and related functions in providing effective businesses processes to achieve organizational goals. Topics covered include TQM, continuous improvement, statistical process control, six SIGMA, MRP, JIT, and project management techniques like GANTT and PERT.

This course addresses the legal and ethical implications of an increasingly comples business world. Covers methods for analyzing and applying personal values, recognizing organizational, environmental, and legal forces that influence ethical behavior, and heightening the student's abilities to recognize legal and ethical issues and engage in effective moral debate in a business setting.

The student examines the issues and strategies of the hospitality industry. The concept of service and linkages to the functional areas of marketing, operations and human resources of hospitality businesses will be discussed. Different strategies for planning and implementing effective cuatomer service will be covered including Six Sigma and utilizing Malcom Baldridge Quality for Excellence criteria in a variety of hospitality settings including hotels, restaurants, food service operations, convention and meeting facilitites, venues, and clubs.
