Fall. Components of food materials and the physical and chemical systems characteristic of food products. The scientific method for solving major food problems is stressed, including objective and sensory evaluation of new commercial food products. An original research project is required.Two hours lecture and 3 hours laboratory per week. Prerequisites: FCS 102 and CHEM 215, 216 and MATH 200.

Spring. Principles of procurement in food service systems. Food and equipment specifications, receiving,maintenance, and financial management.

Spring of even years. Alternates with 436/536. Food service systems, including menu management, quality assurance, quantity food production, distribution and service. The ServSafe training and certification programis a required component of the laboratory experience.Two hours lecture and 3 hours laboratory per week. Prerequisite or corequisite: BIOL 271.

Fall. Covers the functioning and structure of capital markets and financial institutions including equity, debt, money market, currency, futures and options markets. Additional topics include raising external capital, venture capitalist, public securities market, stock markets, stock transactions, interest rates, hedging methods and investment banks.

Fall, Spring, Summer. Managing personal finances; inflation and recession, tax problems, insurance, annuities, credit, budgeting, financial planning, home ownership, bank accounts, investments, and social insurance programs.
