3 hours credit Child Nutrition is a course for people who are currently working with or will be working with young children in a childcare or school setting. Basic nutrition and feeding practices will be studied, with emphasis on the nutritional needs of children from birth through 8 years of age. Ways to integrate nutrition education into the young child's curriculum are stressed. Safe and hygienic food practices are studied.

3 hours credit A continuation of CHLD-0143, this second course presents more detailed techniques, songs, storytelling, art, science, math, and language development with emphasis on creativity and involving the whole child. Prerequisites: Creative Experience I, CHLD-0143 or consent of the instructor.

3 hours credit Business and administrative aspects of starting a child care program are introduced. Students set up a hypothetical child care center and study licensing, and health and safety requirements. Staffing, scheduling, room arrangement, children's program components, budgeting, office management, personnel training, advertising, and parent involvement are demonstrated and discussed. Prerequisite: Completion of required courses in the first year of Child Care Education Program or the consent of the instructor.

3 hours credit This course assists early childhood educators to confirm and celebrate each child's cultural heritage. The increasing diverse nature of American culture and the importance ofunderstanding, sharing, and validating cultural roots are examined. Each student is given the opportunity to explore their personal cultural heritage and analyze the impact that heritage may have on the approach to the early childhood education curriculum.

3 hours credit The course will cover historical and cultural concepts of family, contemporary parenting, theories of family interaction, and parenting concerns. Students will learn about local support systems available to parents and become familiar with parenting experts.

3 hours credit This is a basic course designed to assist Early Childhood Educators and prospective teachers, develop an awareness of the importance of science content, process skills, design of lesson plans that guide young children in science investigation. Activities in this course will pertain to life science, physical science and earth and environmental science. The process of integrating science with other subject areas will be included in writing of developmentally appropriate lesson plans. Investigation will include the use of observation and exploring skills, problem solving, and organizing information.

3 hours credit Students examine the interrelationship of health, safety, nutrition, and movement exploration, with an emphasis on quality care and on organized quality care environments for young children. Current literature is explored.

3 hours credit This multi-disciplinary course is designed to provide students in the Child Care Education and other health related program with knowledge and skills in the assessment & intervention strategies in the developmental areas of: fine & gross motor skills, language & communication, social and play skills, attention & emotional problems, positioning & feeding needs, parenting needs and health & developmental screening. Through this course, students will be prepared to provide appropriate care and intervention for preschool children with special needs.

2 hours credit A presentation of information to help persons seeking to start their own Family Child Care Home Business or those currently operating a Family Child Care Home Business, become a successful entrepreneur at managing their own business. Information will be presented and skills will be learned to create a Parent/Provider Handbook and a Business Plan. Other topics included will be tax and insurance information, state regulations, marketing plan, financial plan, developing policies, communication skills, networking skills and addressing the needs of the children in your care.
