(Prerequisite: None) Introduces students to the trucking industry, federal and state regulations, records and fonns, industrial relations, and other non-driving activities. This course provides an emphasis on safety that will continue throughout the program. Students must complete the AP written exam by the end of the second week of class. On completion of CTD 101, students can take the CDL exam.

(Prerequisite: CTD 101) This course focuses on familiariz ing students with truck instruments and controls and on performing basic maneuvers required to drive safely in a controlled environment. In addition, students acquire basic coupling and uncoupling skills.

(Corequisite: CTD 102) Advanced Operations focuses on developing driving skills under actual road conditions. The classroom part of the courses stresses following safe operat ing practices. On the road, safe operating practices are integrated into the development of driving skills. Students drive a total of 750 documented, over-the-road miles.

(Corequisite: CTD 102) The Internship provides the opportunity for an individual to complete his or her train ing with a company. The internship takes the place of CTD 103 Advanced Operations. Working closely with the school, a company provides the advanced training which focuses on developing driving skills. Students must com plete 44 hours of the road and backing to complete the program.

The internship provides the opportunity for the student to complete their training with a company or their employer. Working closely with the school, their employer provides the advanced training which focuses on developing driving skills on the type of equipment they intend to drive. Dur ing the internship training the student will learn to use all the attachments on their vehicle, i.e.; winches, outriggers, mixers, and spreaders with a dump truck. Here they will obey all environmental laws, D.O.T and O.S.H.A. rules and regulations.

(Prerequisite: Program admission) Provides an overview of the professionalism in culinary arts and culinary career opportunities. Chef history, pride, and espirit d corp are taught. Topics include: cuisine, food service organizations, career opportunities, food service styles, and basic culinary management techniques.

(Prerequisite: Program admission) Emphasizes fundamental kitchen and dining room safety, sanitation, maintenance, and operation procedures. Topics include: cleaning stan dards, O.S.H.A., M.S.D.S guidelines, sanitory procedures following SERV-SAFE guidelines, HACCAP, safety prac tices, basic kitchen first aid, operation of equipment, clean ing and maintenance of equipment, dishwashing, and pot and pan cleaning. Laboratory practice parallels class work.

(Prerequisite: Program admission) Introduces fundamental food preparation terms, concepts, and methods. Course content reflects American Culinary Federation Educa tional Institute apprenticeship training objectives. Topics include: weights and measures, conversions, basic cooking principles, methods of food preparation, and recipe utilisa tion. Laboratory demonstrations and student experimenta tion parallel class work.
