History of food services industry; sanitation, safety, terms, technology, food preparation, introduction to quantity food production and organization of the kitchen.

Practical experience in operation and maintenance of small duplicator presses; set-up, register, ink/water balance and press work on commercial type production jobs. Advanced experience on close register, two and three color work. Use of subtractive and camera generated plates. Required field trips.

The proper use and function of on-demand printing systems. Operation, programming and running of the DocuTech and digital color publishing systems. Overview of the size, scope and career opportunities found in the printing and publishing industry. Use and selection of papers, bindery methods, computers, safety practices and finishing operations required in the on-demand publishing field. Training in customer service techniques, job planning and quality aspects used in this segment of the printing field. Lecture 1 hour, lab 1 hour. Required instructional trips.
