    Introduction to HACCP Pre: Co: Learn nationally and internationally accepted HACCP (Hazard Analysis and Critical Control Points) standards and be able to effectively implement a successful HACCP plan. You will study practical, real world interactive case studies that cover the "five preliminary steps" of a HACCP plan and the application of its "seven principals." Also included are HACCP plan development forms that can be used in the creation of your program. This program is a must for food industry educators, food manufacturers, healthcare facilities, foodservice operations, and retail food purveyors, and any organization or business that handles or transports food products. A $40 materials fee is payable to the instructor at the first class.

Certified Food Safety Professional Pre: Co: A Certified Food Safety Professional (CFSP) is a credential recognized by the Counsel on Food Safety as the minimum standard for public health inspectors who are responsible for assuring a safe food supply. Qualified students can earn this certification through the National Environmental Health Association by passing a standardized exam held on the last day of class. The course is designed around exercises and lectures from a required textbook and study guide to prepare students to pass the CFSP exam. Prerequisite: successful completion of a food safety management course such as ServeSafe. Please visit the NEHA website at www.neha.org for more information on qualifications, application and testing fees. You must download the test and submit it to NEHA postmarked at least four weeks prior to the test date. A coupon from NEHA is required as entry to the test. You must purchase the required textbook from NEHA before class begins. The cost to register for this class at NSCC is seperate from NEHA fee's, payable to the college upon registration.

The student will learn how to operate the mouse, keyboard, and printer as well as gain experience with the Macintosh environment. At the completion of the course participants will understand the features in the main menu and be able to set up files and folders, organize their desktop, and save documents. The class will cover creating, editing, saving, formatting and printing a document as well as working with tools such as the spell checker and thesaurus. Students MUST be comfortable with the Macintosh desktop and have keyboarding skills.

Topics covered will include setup procedures, use of graphic tools, text production and miainipulation, importation of graphics and text, and style management. The "final exam" will be the completion of a desktop publishing project. Students MUST have computer and mouse experience. A 3-1/2" disk is required. Class size limited to 15.

    Basic Accounting for Small Business Pre: Co: Elect: Covers the basic bookkeeping and accounting needed for small and start-up businesses, including how to set up books, record transactions and prepare monthly financial statements. Learn to understand financial reports, the basic criteria and items to consider in incorporation, partnerships and sole propietorships, S vs. C Corps, cash vs. actual basis, proper reporting for bank and SBA loans, tax-filing, requirements, manual vs. computerized accounting and how to evaluate a business' worth.
