    The Essentials of Organic Wine Pre: Co: As the world has become more environmentally conscious, so has the wine world. As organic and biodynamic wines continue to increase in popularity, more producers are converting to organic grape-growing practices. Unfortunately, these wines can be hard to find or identify. During this one day class, you will learn what makes a wine organic, the differences between organic and biodynamic wines, how to identify them in a retail store, and all about sulfites. You will also have the opportunity to compare non-organic with organic and biodynamic wines. A $20 fee for food and wine is payable to the instructor at the first class. Students are required to bring four wine glasses to each class.

Learn about project framework, the five project management processes, and the nine knowledge areas and have the opportunity to practice this material through exercises and quizzes.     Assistant Laboratory Animal Technician Test Preparation Pre: Co: The field of laboratory animal care is growing faster than the workforce has been able to support, and there are more positions available than there are qualified applicants to fill them. This course will review the ALAT material to prepare the student to take AALAS (American Association for Laboratory Animal Science) ALAT (Assistant Laboratory Animal Technician) certification test. Upon successful completion of the test, along with AALAS specified work experience, the student will gain ALAT certification. Completion of this course provides the student with an advantage in seeking employment in the laboratory animal care field. Class meets on 2/16, 3/2, 3/16, 3/30, 4/13, and 4/27. Textbook included in price.

    Hors d'oeuvres - Session Two Pre: Co: This session will introduce some small plates to the hors d'oeuvres scene. How about gorgonzola, apricot and walnut stuffed pork tenderloin? Gorgonzola grapes covered in chopped pistachios? Mini mushroom turnovers with wild mushroom filling (also used as a pate). Brandy flavored chicken liver pate and sensational spicy shrimp dip round out the class. There will be an opportunity for students to add specific suggestions to the class repertoire. A $40 perishables fee is payable to the instructor at the first class.

    Fabulous Wines on a Budget Pre: Co: Today's economic downturn is not all bad news. It has resulted in a worldwide wine surplus. You will taste wines with high QPR (Quality Price Ratio) and be introduced to wines from around the world that deliver higher than average quality for below average prices. A $15 fee is payable to the instructor to cover wine and food. Bring four wine glasses to class.

    Wines of Southern France Pre: Co: Burgundy, Bordeaux and Champagne are France's great wine regions. Our focus, however, is to the south where there are many more moderately priced wines of great flavor and character. Join us while we taste the wines of Languedoc, Roussillon, Provence, and the Rhone, wines from independently owned vineyards, harvested, fermented, aged and bottled on their own property. Our goal will be to introduce you to high quality, yet moderately priced wines that will add to the quality of our lives in our increasingly harried and economically challenged times. A $20 fee is payable to the instructor in class. Glasses will be provided.

    LEED Green Associate Exam Prep Pre: Co: The LEED Green Associate Exam Prep course makes you eligible to take the LEED Green Associate exam and meets the GBCI application requirements. Taught by experienced Green Building consultants. The course provides an overview of the LEED program, USGBC, and GBCI and on various cost assessment tools to evaluate sustainable strategies. Includes a workbook with presentations, sample questions, and additional resources. 9.0 AIA/CES Sustainable Design LU are offered. Participants receive a certificate of completion that can be used to fulfill continuing education (CE) requirements of other professional certifications and to apply for LEED Green Association exam.
