Specialty Cakes for all Occasions Pre: Co: Your budget may be smaller but that doesn't mean you can't have special occasion cakes. Learn to be creative and budget conscious with simple techniques to create perfect Italian and French butter cream frosting, lemon and lime curd, and orange cream cheese mouse, all you need for a variety of wonderful cakes, including: a heart-shaped chocolate cake for Valentine's Day; a St. Patrick's Day shamrock cake; or a bunny cake for Easter, and more. All About Pinot Noir, The Wine of Sideways Pre: Co: This grape, which has its origins in the Burgundy region of France, has been successfully planted in other regions throughout the world. The class will feature a brief history of the grape; its health properties, and the controversy that surrounds Pinot Noir today. Attendees will enjoy a variety of Pinot Noirs from around the world. Today, components in wine are being studied for their health-giving properties. It is believed that wine may hold the key to slowing the aging process, and for providing protection from a number of dieases, including dementia, heart diease, rheumatoid arthritis, and various forms of cancer. Whether you are new to wine or an aficionado, come and learn why wine can add to a healthy lifestyle, while taking red and white wines carefully chosen to match the presentation. Become a Better Wine Buyer-Understanding the Label Pre: Co: Have you ever entered in a liquor store or wine shop and have been confused by a bewildering array of wine labels? Cute animals, clever names, and celebrities are all designed to get your attention but don't reveal anything about the wine inside the bottle. How can you identify the grape variety if it isn't listed on the label? What is useful information and what is just marketing. This two part presentation will focus on U.S. and French wine labels. A $20 fee for the cost of food and wine is payable to instructor in class. Students are required to bring four wine glasses to each class.

Oraganic and Biodynamic Wines Pre: Co: As the world goes environmentally conscious, so has wine. As organic and biodynamic wines continue to increase in popularity, more producers are converting to organic grape-growing practices. Unfortunately, these wines can be hard to find or identify. During this one-day class, you will learn what makes a wine organic, the differences between organic and biodynamic wines, how to identify them in a retail store, and about sulfites. You will also have the opportunity to compare non-organic with organic and biodynamic wines. A $20 fee is payable to the instrucor in class to cover wine and food.

Enjoying Wine on a Budget Pre: Co: In these uncertain economic times, it has become necessary for everyone to keep track of expenses. If you happen to be a wine lover, you need not give up buying wine entirely. Sample wines at different price points and discover that price is not always a guarantee of quality. You will learn how to recognize good quality wines that are also very affordable. In other words, save money and still be able to enjoy that cherished glass of wine. A $15 fee is payable to the instructor in class to cover wine and food.

Ordering from a Restaurant Wine List Pre: Co: Ordering from a restaurant's wine list can be a lesson in frustration. You don't usually get to see the label before the selection is made, but you are expected to make an intelligent choice based only on the name of the producer, the vintage, the grape variety (if you are lucky), and the cost. Get tips for identifying good choices; on ordering wines by the glass; and a look at how restaurants price their wines. We will also take a look at the whole ritual of ordering wines in restaurants. A $20 fee is payable to the instructor in class to cover wine and food.

All About Bubbles: Champagne and Sparkling Wine Pre: Co: This class will explain the differences between champagne and sparkling wine. Learn how drinking champagne is thought to be beneficial for your health and about the woman who were instrumental in making champagne what it is today. Compare expensive and inexpensive champagnes and sparkling wines, while enjoying amusing anecdotes involving European royalty and their love of champagne. A $35 fee to cover wine and food is payable to the instructor.

Container Planting and Cooking Pre: Co: Imagine opening your window or walking out the back door to pick fresh ingredients for your summer salad or pasta. Make salad dressings, compound butter flavored vinegars and oils with produce grown in containers on your deck, porch or window boxes. Get tips on container growing lettuce, spinach, tomatoes, basil, peppers, edible flowers and herbs, and then use them to make basil pesto, chive butter, rosemary oil and tarragon vinegar and much more! Frozen Desserts Pre: Co: Everyone love ice cream during the hot summer months, but it's not the only frozen dessert! Learn to prepare mango-lime granita, watermelon ice, frozen espresso cheese cake, lemon semifreddo cake. And of course, learn how to make vanilla ice cream and chocolate gelato, or even create your own specialty frozen dessert. A $30 perishables fee is payable to the instructor at the first class.
