France: French Pastry Pre: Co: Elect: Fine French Cuisine in your own kitchen! This course will concentrate on mouth watering desserts with a French accent. No special skills are needed. Students will gain confidence as well as a collection of traditional recipes. A sampling of dishes to be chosen are French crepes, puff pasteries and marguis au chocolate. Students should bring $10 to the class for groceries and related products.

Introduction to Portuguese Cooking Pre: Co: Elect: This course is designed to be an introduction to hearty and tasty Portuguese home cooking. Students will participate in preparing a full course meal to enjoy during each class which will include authentic traditional Portuguese receipes like Kale soup, hearty linguica sausage stew, heartwarming stewed chicken, and delicious sweet rice pudding. Students will become acquainted with various traditional ingredients such as olives, sausages and fish that are important to its cuisine. Instructor is a professional culinary student who has devoted a lifetime to preserving heirloom Portuguese recipes. Students should bring $25.00 to class for groceries. Class limited to 12 students.

Authentic Greek Cooking - Made Easy - Part I Pre: Co: Elect: This course offers a practical approach to creating delicious, wholesome meals with an authentic Greek theme for your family, your next dinner party, or holiday celebration. Only fresh, pure ingredients are emphasized as you learn to work with fillo dough, make sweet honey syrups, and assemble a healthy, appetizing Greek table. Demonstrations, as well as a hand-on approach, will be used (bring an apron) to create delicious appetizers, hearty soups and salads, savory entrees, and irrestible desserts. Recipe presentations include: cultural perspectives, preparation, cooking times, serving/storage tips and taste-testing. In addition to tuition, a one-time charge of $50.00 is required to cover ingredient costs. Class size is limited.

Authentic Greek Cooking Made Easy - Part II Pre: Co: Created by popular demand for those of you who enjoyed Authentic Greek Cooking - Part I, this four-session course is designed with all new recipe information and demonstrations (you'll still need your apron). From a simple, hearty Greek Beef Stew to elegant Artichoke and Feta Cheese Stuffed Phyllo Triangles, past students will add to their repetoire of Greek recipes, while satisfying their taste buds. In addition to tuition, a one-time charge of $50.00 is required to cover ingredient costs. Class size is limited.

Italian Country Cooking Pre: Co: Elect: In any language, country cooking is good heary fare. In this course we'll explore the flavors of "Cucina Robusta", the Italian peasant cooking now appearing and influencing trendy restaurant menues everywhere. We'll sample dishes from Tuscany, Calabria, Campagna, and Sicily as we use the freshest products available like garden tomatoes, red peppers, fresh basil, and meats like veal, rabbit, and chicken. Students should bring $30 to the first class for groceries and related products.
