Pre: Co: Elect: ANTIPASTO WORKSHOP: An antipasto comes before the pasta and is not translated as "salad" but a tasty tidbit. They are easy to prepare. Included in the course is a variety of antipasti to be served individually before a meal or combined for one big Italian gala. Included are roast peppers, "promodori ripieni," and marinated mushrooms. Students should bring $5 to the first class for groceries and related products. Class limited to 15 students.

Pre: Co: Elect: GOURMET SALAD WORKSHOP: Learn how to prepare great tasting salads in this workshop. A discussion on the different types of lettuce available for use in salads, on what makes good ingredients for a salad dressing, different herbs and spices to use in salads, and much more. Eight salads taught in this class. They are: Waldorf Sald, Caesar Salad, Herbed New Potato Salad, Antipasto, Chilled pasta salad, Spicy Carrot Salad, Watercress and Walnut Salad, and CHinese Noodle Salad. Demonstration with some participation. Students should bring $5 to the first class for groceries and related products.

You will learn to turn inexpensive, high protein ingredients into delectable low-calorie Chinese meals. Learn about wok cooking, steaming, deep frying, hard-to-find Chinese ingredients and stir-fry techniques. A few of the meals are: Shrimp with Cashew Sauce, Stir-Fried Vegetables, Boiled Rice, Beef and Scallps with Oyster Sauce, Sweet and Sour Pork, Cucumbers with a Peanut Sauce, Hot and Sour Soup, Long Soup, Chinese Steamed Fish, Noodle Salad, and many more. Demonstrations with some participation.
