    Class hours: 2.0 Lecture/6.0 Laboratory Corequisite: CA 101 with a grade of Pass or "C" or higher or prior completion. This course introduces the student to basic baking techniques and basic ingredients utilized in the industry. This course will cover developing a variety of breads, sweet doughs, roll varieties, pie dough and fillings, cakes and pastries. A negative T.B. test for food service personnel is a State regulation.

    Class hours: 3.0 Lecture/7.0 Laboratory Prerequisite: CA 80 and CA 101 or equivalent with grades of Pass or "C" or higher. This course introduces the student to the baking industry, baked products, and ingredients. The student will develop basic skills utilized in professional bakeries. Demonstration and practical experiences in the preparation and use of doughs, pastries and creams, adjusting standard recipes, and interpretive use of weights and measures are included. A negative T.B. test for food service personnel is a State regulation.

    Class hours: 3.0 Lecture/7.0 Laboratory Prerequisite: CA 81 or equivalent with a grade of Pass or "C" or higher. This advanced baking course provides the opportunity to increase skills in producing a more uniform product, with high eye appeal, and improved taste and structure. These products include cake, pastries, icings, and fillings. Processed frozen dough, fried products, and frozen baked products and introduced. Maintaining product freshness is emphasized. A negative T.B. test for food service personnel is a State regulation.

    Class hours: 3.0 Independent Study A course to provide opportunity for individual research and field projects under the direction of a faculty member in a given department. With the guidance of the faculty member, students prepare and carry out a written learning agreement describing the purposes and outcomes of the project. Students should expect to meet with the supervising faculty member one to two hours each week for conferences. Credit is based upon the number of hours in the semester expected to complete the project (1 unit for 54 hours, 2 units for 108 hours). This course may be taken a maximum of 2 times.

    Class hours: 3.0 Lecture This course explores the physical, cognitive/language, and socio-emotional development of the child from the prenatal through adolescent period across diverse cultures with an emphasis on the learning process and developmentally appropriate teaching practices. The student will also learn the effect of family, peers, and society upon children at different ages. This course meets the Department of Social Services Classification Indicator DS 1.     Class hours: 3.0 Lecture This course is designed to introduce students to various current family, school, and community partnership models and approaches. Students will acquire knowledge and skills toward fostering two-way partnerships with families and communities of diverse backgrounds from primary through high school. Historical, legal, social, and political perspectives regarding educational access and equity for diverse student populations found in contemporary classrooms will be addressed. Teacher candidates will also broaden their knowledge and understanding of ethnically and linguistically diverse families and communities to be more effective in building relationships with them.     Class hours: 3.0 Lecture This course covers the principles of implementing a bias-free, anti-bias, and multicultural curriculum for young children. Race, ethnicity, class, gender, exceptionality, and age will be discussed along with the social and cultural conditions that influence a young child's education. Emphasis will be placed on helping the child understand one's own culture as well as the culture of others. Transfer Credit: CSU

    Class hours: 3.0 Lecture Recommendation: CDEC 111 and CD 110 or equivalent with grades of Pass or "C" or higher. This course covers the theories of behavior, guidance techniques, and effective communication, observational, assessment, and documentation of young and school-age children. The emphasis will be on developing an understanding of children's behavior and encouraging positive self-esteem while helping the child work toward self-control. Content will cover understanding observation as an integral part of appropriate instruction and intervention. This course is not open to students who have received credit for CD 137 and CD 138.
