This course will introduce students to the scientific principles of beer brewing and beer analysis. Students will use standard analytic, microbiologic, and molecular techniques to assess the properties of the developing or finished product. Students will brew beer to hone their brewing skills while investigating the characteristics of different ingredients. Offered winter semester.
