BAK270 - BAK 270 Baking Practical Exam This baking examination tests students understanding of the fundamental and advanced competency in the principles of baking. Students will create a dessert menu to include a range of textures, flavors, colors and presentations. Students will also be tested on station set up, craftsmanship, culinary techniques, product presentation, flavor, texture, color and the ability to answer a range of questions posed by chef instructors. High Pass/Pass/Fail grading. Pre-requisites: BAK 105, 110, 115, 120, 125, 130, 200, 205, 210, 220, 225, 230 and CUL 150
