Students will utilize practical techniques of platter design and presentations. Students will design, organize and set up pastry buffets suitable for large scale functions. Focus will be given to scaling recipes, menu design and pricing. This capstone course will engage students in the creation of large scale pastry and confection menu design. ( 3 credits) Prerequisites: CUL150, BAK100, BAK105, BAK110, BAK115, BAK120, BAK125, BAK130, BAK200 AND HSP125
