Pre: Co: Elect: SENSATIONAL SALADS: Cool and inviting, salads are the way to refresh spirits and witing appetities in the warm weather ahead. This course will cover classics like Ceasar and Waldrof salads and introduce newer concoctions like Spicy Scallop Sald with Thai-style Peanut Dressing and Chicken Tortellini Salad with Lemon Pesto Vinaigrette. Experiementation with a variety of vinegars and oils for the dressings will be included, as well as some make-ahead salads to keep you out of the kitchen in the heat. Students should bring $12 to class for groceries and related products.
