Pre: Co: Elect: Create vegetables to accompany your main course or use as a meal in itself. Learn different methods to prepare vegetables, cutting techniques, a discussion on herbs, and much more. Some dishes: Carrots & Green Beans with Basil & Mace, Stir-fried Vegetables, Green Beans Almondine, Southern Style Corn, Saute Summer Squash, Ratatouille, Cauliflower with a Nutmeg Sauce, Broccoli with a Dilled Cheese Sauce, Candied Carrots, and Orange-Buttered Broccoli. Demonstration with some participation. Students should bring $5 to the first class for groceries and related products.
