Pre: Co: Elect: We will tour France gastronomically. Learn the simple and the complex in mastering the French technique of cooking. Learn to appeal to the eye first, the senses second, and the palate last. We begin with the preparation of stocks from scratch then the making of sauces, appetizers, vegetables and meat buying and preparation, as well as cheeses and desserts. Menu planning, both formal and informal is included. Classes consist of demonstrations with class participation. Students should bring $25 to the first class for groceries and related products.
