Prerequisites: GSTR 210 or permission of instructor Offered: Typically every Fall Term A study of the cross-cultural role of food as an integral component of early civilization through more modern societies, including both western and non-western cultures. Through selected readings, the use of artifacts, interviews, field trips, personal reflections, and hands-on opportunities, we will survey the historical evolution of food from early civilization through the Middle Ages, the Renaissance, the Industrial Revolution, and into the 21st century. This examination will explore the use of and symbolic representation of food within selected religious traditions, ethnic groups, health practices, and other aesthetic, moral, and social norms and cultural contexts.
