3 (3 + 0) Prerequisite: NUT 2040, CHE 2100, BIO 2320 This course provides a detailed study of the biochemistry of nutrients, metabolic functions in health and disease, food composition, digestion, absorption, and nutrient utilization. Students will gain an understanding of the structure and function of nutrients, as well as metabolic reactions and interrelationships between macronutrients, micronutrients and phytonutrients.
