This is an intermediate course which introduces the student to the fundamentals of facilities planning for the commercial, institutional and industrial food service industry. The student is introduced to the need for proper planning, layout and design of production and service areas. The student becomes familiar with computer systems designed in restaurant planning. The major portion of the course is the student's involvement in individual projects on kitchen layout. Prerequisite: FSM1001 or HOSP1001 or SEE1001 or A.S. degree in Culinary Arts or Baking & Pastry Arts. Quarter Credit Hours 4.5
