This course provides an introduction to the biological, ecological, and social factors influencing diet and nutrition. Basic nutritional physiology and biochemistry are presented in the first part of the course. Later topics include paleonutrition as well as nutritional issues of contemporary human population groups. The core focus is on the concept of energy balance. Time is spent in the metabolic laboratory learning how to measure metabolic energy expenditure and assess nutritional status in humans. Students participate in the collection and analysis of individual and class data on nutritional intake and energy expenditure, with an emphasis on basic techniques of data presentations, analysis, and interpretation.
