(253) First semester. Three credits. Two class periods and one 3-hour laboratory. Prerequisite: Open to juniors or higher. Mancini A study of the food products derived from animal agriculture, including dairy, meat, poultry and fish. Emphasis will be placed on inspection, grading, processing, biochemistry, nutritive value and food safety concerns of these products. A fee of $50 is charged for this course.
