This course involves hands on application of managerial responsibilities associated with operating an actual business enterprise. Students will work together as a team to plan and make decisions in the areas of menu planning, promotion and marketing, daily cash management, human resources management, personnel supervision, and administration of store environment. Students will participate in a supervised, workplace practicum, up to 10 hours per week for a total of 120 clock hours during the semester. Punctuality, attendance, and overall team effort are essential for success in this course. Prerequisite: CE 21023 Service/Retail Practicum I.
