As an introduction to food service management this course includes qualities and responsibilities of an effective food service manager; organization of a food service operation; technique of management; selection and training of personnel; quality, production and cost control; and ethics of buying practices. This course also includes a review of purchasing procedures, methods and selection of food by written specification and the consumer. Prerequisite: DIET 2510 Quantity Food Service Management I.
