Prerequisite: AGRI 180 or department approval This course is a continuing study of the characteristics associated with the value of carcasses and wholesale cuts from beef, pork and lamb, including quality and yield grading, and classification. Field trips to local lockers and meat packing plants, and participation in competitive events are required. This course is limited to the members of the meat judging team.
