Included are the basic nutrients, their functions, food sources and the eff ect of defi ciencies. Th ere is an emphasis on correct information to combat food faddism. Planning for normal nutrition through the life cycle and special needs of the elderly, children and pregnant women is discussed, as well as sanitation of food, legislation and labeling as it aff ects the food supply.
