3 Credits Presents introductory material on all types of dishes, how and when they are used. Includes the duties of waiters and waitresses, personal hygiene and appearance, basic rules and procedures for serving, accident prevention, familiarization with menu items, banquet service & table settings, and French, Russian and English buffet and smorgasbord service. Ninety hours of work experience in the food laboratory are included.
