Also, menu design merchandising and marketing, menu engineering (customer demand, menu mix analysis, and item contributions margin), perspectives, (delegating, food cost question, retaining managers, developing annual operational and capital budgets, and forecasting the club industry), preventing internal theft, club by-laws and contracts, and responsible beverage service will be emphasized.
