5 credits quarters: S Winemaking is a complex process. This course will explore fermentation techniques in detail and review important post-fermentation treatments. Wine spoilage will be discussed. There will be a detailed review of the chemical constituents in grapes and wine. Appellation control laws and adulteration concerns will also be addressed. Prerequisite: AGSCI 212
