Learn to prepare canapés, hot and cold hors d’oeuvre,appetizers, forcemeats, patés, galantines, terrines, salads, and sausages. Curing and smoking techniques for meat, seafood, and poultry items will be practiced, along with contemporary styles of presenting food and preparing buffets.
