3 credits Prerequisites: CHE 112, BIO 112 and two additional biology courses. This course meets the Capstone Experience requirement. Students taking this course may not also get credit for NUR 265. Through original articles this course examines the physiological, biochemical, and molecular interactions related to nutrient utilization. Topics include structure and function of vitamins, proteins, carbohydratesand lipids, hormonal control of eating, satiety, and metabolism, the role of genetics in metabolic control, physiology and molecular biology of taste and smell.
