This is a comprehensive course covering nutrition, diet and menu planning using sound nutritional guidelines. Food chemistry including portein, carbohydrates, lipids, vitamins, minerals, and water are presented with respect to their function within the body. The connection between food choices, specific nutrients and associated disease states are explored, as well as the changing nutritional needs of children and the elderly. The microbiology of food poisoning and food allergies are also covered.
